Aduna Organic Fonio is an ancient grain, prized for its delicious, nutty flavour and light, fluffy texture. It can be used as a gluten-free alternative to couscous, quinoa or rice. Use it in salads, soups and stir-fries or as a delicious, creamy porridge.
Native to West Africa where it is known as ‘The Seed of the Universe’, fonio is a drought-resistant, regenerative crop, helping to reverse the effects of climate change and generate income for the women’s co-operatives that we source from.

To use as an alternative to quinoa, rice or couscous in salads, soups, stir-fries or as a side dish:
Microwave: Place 50g fonio to 100ml water. Cover and microwave for 2 minutes at 800W and fluff. Let stand for a further 2 minutes.
Hob: Place 50g fonio and 100ml water into a pan. Bring to a boil, reduce heat and simmer for 1 minute 30 seconds, stirring often. Let stand for a further 1 minute and 30 seconds and then fluff.
To use as an alternative to porridge:
Microwave: 50g fonio and 240ml milk or milk alternative for 3 and a half minutes. Rest for 2 minutes.
Hob: Use 320ml milk or milk alternative, boil then simmer for 7-10 minutes, stirring often. Add more milk if needed.
